CANNED CHILI 
5 lb. red chili beans
5 lb. lean ground beef
2 lg. onions, chopped
3 1/2 qt. tomato juice
1 1/2 qt. tomato sauce
3 1/2 tbsp. salt
2 tsp. pepper
1 tbsp. sugar
1 clove garlic, pressed
Chili powder to taste
Red pepper to taste

Soak beans overnight. Cook in the same water 1 hour. Cook meat and onions together. Combine all ingredients and cook until beans are tender. Beans should be covered with liquid when done. Fill hot jars and pressure cook for 60 minutes at 15 pounds pressure. Yields 15 quarts.
