CANNED TACO SAUCE 
3 c. tomatoes, peeled and chopped
3 c. whole jalapeno peppers, seeded and finely chopped
3/4 c. onion, chopped
1 1/2 tsp. salt
3 garlic cloves, minced
1 1/2 c. vinegar

Use rubber gloves to remove seeds from jalapenos. Combine all ingredients; bring to a boil. Cover and simmer 5 minutes. Pack in sterilized jars. Use all the liquid.

Divide it evenly among jars; put on the cap and screw band firmly tight. Process in boiling water bath for 30 minutes. Start counting processing time when water returns to a boil.
