"MELON-COULIS BABY" SMOOTHIE | |
1 cup cantaloupe, chopped into 1-inch cubes 1 cup honey dew melon, chopped into 1-inch cubes 1/2 cup simple syrup (see below) 2 tbsp. chopped mint 1 1/2 cups Greek-style low-fat vanilla yogurt Place all ingredients in a blender. Pulse until mixture is smooth and ingredients are thoroughly combined. Serve in cold glasses. Makes 2 large or 4 small smoothies. HOMEMADE SIMPLE SYRUP: granulated sugar water In a saucepan, cook equal parts sugar and water on stove top, until sugar dissolves, and mixture is bubbling and starting to get a golden tint.
