SWISS STEAK 
2 1/2 lbs. chuck or round steak
1 1/2 tsp. salt
1 med. onion, sliced
2 c. canned tomatoes
1/3 c. flour
Pinch pepper
1 carrot, cubed
1 c. water

Trim fat from meat; place fat in large skillet or Dutch oven over medium heat. Mix flour, salt, pepper. Cut meat into serving pieces. Dredge with flour and pound it into meat. Remove fat from pan; brown meat and onions in hot fat. Add carrot, tomatoes and water. Cover and simmer 1 1/4 hours until tender, or bake in 350 degree oven about 1 1/2 hours. Yield: 6 servings.
