OLD FASHIONED EGG PLANT | |
1 solid eggplant 1/2 c. cracker crumbs 2 eggs 1/4 c. milk 1 tsp. salt Peel eggplant and cut in pieces. Boil in salt water about 5 minutes. Drain and mash. Combine cracker crumbs, eggs, milk and salt; mix with mashed eggplant. Dot with butter and bake in 350 degree oven until crusty on top. |
