ZUCCHINI-BEEF CASSEROLE 
1 lb. (3 sm.) zucchini, diced
1 sm. onion
1 c. sliced mushrooms
1 lb. ground beef
1 lg. can crushed tomatoes
Garlic powder, basil, oregano to taste
1/4 c. grated cheese

Saute zucchini and onion until soft. Put in large greased casserole dish (or 9"x12" pan). Saute mushrooms for 5 minutes then add hamburg. Drain well. Add tomatoes and spices. Mix together with zucchini and onion mix. Sprinkle grated cheese on top. Cover with foil and bake at 375 degrees for 35 minutes. Delicious served over rice or egg noodles.
