BEEF BARLEY SOUP | |
2 cups diced carrots 2 cups diced celery 1 onion, chopped vegetable oil 1 lb. fresh mushrooms, sliced 4 quarts chicken broth 1 (1 lb.) pkg. barley, rinsed 1 lb. beef cubed or flanken salt and pepper, to taste Sauté carrots, celery and onion in oil in soup pot until tender. Add remaining ingredients. Cook 2 hours, stirring often. |
