PEACH COBBLER 
1/2 c. sugar
1 tsp. cornstarch
2 1/2 c. canned peaches with juice

TOPPING:

1 c. flour
1 tbsp. sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
3 tbsp. shortening
1/2 c. milk

Heat oven to 400 degrees. Mix sugar, cornstarch in saucepan and bring to a boil for 1 minute, stirring constantly. Add fruit and juice. Pour into a 1 1/2 quart baking dish and dot with butter and sprinkle with cinnamon.

Stir flour, sugar, baking powder and salt in a bowl. Cut in shortening until mixture looks like "meal". Stir in milk. Drop by spoonfuls onto hot fruit. Bake 25-30 minutes. Serve warm.
