BEEF & RICE 
1 lb. ground beef
1 c. rice
1 sm. onion, chopped
2 tbsp. oil
1 tsp. salt
1 tsp. paprika
1/2 tsp. pepper
1 sm. bottle olives, sliced
2 c. tomato juice
1/2 c. grated cheese

Brown ground beef with rice and onion in skillet, stirring until crumbly. Add remaining ingredients except cheese with 1 1/2 cups boiling water, mixing well.

Pour into 1 1/2 quart casserole. Bake, covered, at 300 degrees for 1 hour. Top with cheese. Bake uncovered for 10 minutes longer or until cheese is melted. Yields 6 servings.
