MEXICAN BEEF AND RICE 
1/2 lb. ground beef
4 whole scallions, sliced
1 (8 oz.) can tomato sauce
1/2 c. water
2 tbsp. sliced pitted ripe olives
1 1/2 tsp. chili powder
3/4 c. dry Minute Rice
tortilla chips

RANGE: Brown beef with scallions, break beef in pieces. Add tomato sauce, water, olives, and chili powder. Bring to a full boil.

Stir in rice. Cover; remove from heat. Let stand 5 minutes. Fluff with fork. Serve with tortilla chips. 2 servings.

MICROWAVE: Place beef, in small pieces, add scallions in microwave safe baking dish. Cover and cook at high for 2 minutes. Stir in remaining ingredients except tortilla chips; cover and cook 5 minutes longer. Fluff with fork. Serve with tortilla chips.

Since microwave ovens vary in power, you may need to adjust your cooking time.
