BEEF ENCHILADAS 
1 pkg. sm. tortillas
1/2 lg. white onion
1/2 lb. ground beef
1 (13 oz.) can chili w/out beans
1/4 tsp. salt
Dash of pepper
1/4 tsp. crushed red pepper seeds
1/2 lb. grated cheese

Brown onion and ground beef. Add chili, salt, pepper and seeds to beef. Cover and simmer for 10 minutes.

Spray Pam or melt a little butter in small fry pan and place 1 tortilla on at a time to soften. Place 4 tablespoons mixture, 1 teaspoon cheese and 1 teaspoon onion on each tortilla. Roll and place in 9 x 13 inch pan. Pour remaining ingredients over the tortillas. Bake at 350 degrees for 15 minutes or until cheese melts.
