BROCCOLI & CORN CASSEROLE 
2 tbsp. chopped onion
2 tbsp. butter
1 tbsp. flour
1 1/4 c. milk
8 oz. cheese, sliced thin or grated
1/2 c. cracker crumbs
2 (10 oz.) pkgs. frozen broccoli or fresh
1 (10 oz.) frozen corn

Saute onion in butter. Blend in flour. Add milk, cook stirring constantly until thickened. It will be thin, add cheese and stir until cheese is melted. Stir in corn and 1/4 cup of cracker crumbs, cook broccoli according to directions or until tender. Lay in bottom of 11 x 7 inch buttered casserole dish, cut the stems in smell pieces. Pour cheese sauce and corn mixture over broccoli. Toss the remaining bread crumbs and butter over top. I add a few chunks of butter to the top. Bake at 350 degrees for 30 minutes. You can make this ahead and refrigerate.
