MONDEL SCHNITS 
2 eggs
1/2 c. sugar
2 tbsp. icy cold water
1/2 tsp. lemon extract or 1 tbsp. lemon juice
3/4 c. sifted flour
1/2 tsp. baking powder
1/4 tsp. salt
3/4 c. sliced unblanched almonds
2 tbsp. sugar

Beat the eggs and sugar together until mixture is thick. Add the water and extract; beat well. Sift the flour, baking powder and salt together. Add gradually to egg mixture folding until blended after each addition. Fold in the nuts.

Pour the batter into a greased (bottom only) 8x8x2 inch pan. Sprinkle remaining sugar over the top. Bake at 350 degrees F. about 20 minutes, or until cake is lightly browned. Allow the cake to cool in pan before cutting into slices. One 8 inch square cake.
