CARROT BREAD 
3 eggs, well beaten
3 c. sugar
1 c. vegetable oil
3 c. all-purpose flour
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. salt
2 c. carrots, grated
1 c. walnuts
1 (9 oz.) can crushed pineapple, drained
2 tsp. vanilla

Mix all ingredients well and pour into a greased loaf pan. Bake at 375°F for 1 hour.
