Bring 4 cups of water to a boil.
Add: 1/2 c. honey 2 tbsp. salt 2 tbsp. oil 2 c. old fashioned oatmeal
Stir the above mixture well and cool to lukewarm.
Meanwhile put 2 tablespoons yeast and 1 teaspoon of sugar into 1/4 cup lukewarm water, mix and let set a few minutes. (I usually make the yeast tablespoons slightly rounded.) Add yeast to oatmeal mixture. Then add flour and mix well. The batch usually takes about 10 cups of flour in all. After kneading the dough, cover and let rise until doubled. Make into loaves (4 large loaves) or buns or whatever---. Let rise until doubled. Bake in 325 oven. The loaves take about 45-50 minutes to bake. Buns and whatever less. This bread is delicious toasted.
