DIABETIC RHUBARB JAM 
5 c. rhubarb, cut in sm. pieces
1 c. crushed pineapple

Mix rhubarb and pineapple together and bring to a boil, stirring constantly, to avoid sticking, for about 12 minutes or until the rhubarb is completely cooked. Remove from heat and add: 10-12 pkg. Equal sweetener

Refrigerate overnight and then place in freezer until needed.
