ZUCCHINI FRITTATA 
3 c. zucchini, finely shredded
1/2 c. onion, chopped
6 to 8 cloves of garlic, pressed
2 tbsp. parsley flakes
1/2 c. vegetable oil
1 c. Bisquick
1/2 tsp. marjoram
1/2 tsp. seasoned salt
1/2 c. Parmesan cheese
4 eggs, lightly beaten
Salt & pepper to taste

In large bowl mix zucchini, onion, parsley, seasonings, cheese, oil and garlic. Stir in eggs and Bisquick thoroughly. Pour into a 9 x 13 inch greased glass pan. Bake at 350 degrees for 25 minutes or until set. Cool and cut. Serve warm or cold.
