ZUCCHINI FRITTATA | |
4 green onions, sliced 1 tbsp. butter 8 eggs 1 c. Half & Half 3/4 tsp. salt 2 c. shredded unpeeled zucchini (2 sm.) 2 1/2 c. (10 oz.) shredded Monterey Jack cheese Handful parsley Cook onions in butter until tender. Beat eggs with Half & Half. Add salt. Stir in onions, zucchini and 2 cups cheese. Pour into buttered 9 x 13 inch baking dish. Top with remaining cheese. Bake at 350 degrees for 25 to 30 minutes. |
