BAKED ZUCCHINI FRITTATA 
1 1/2 c. shredded zucchini
4 eggs, slightly beaten
3/4 c. fine bread crumbs
1/2 c. milk
1/4 c. grated Parmesan cheese
2 tbsp. butter, melted
1/2 tsp. onion salt
1/2 tsp. salt
1/4 tsp. pepper
1/4 c. finely chopped onion

Combine ingredients. Pour into buttered shallow dish. Bake at 375 degrees for 25 to 30 minutes or until set. Cut into wedges. Serve as a main dish for lunch or brunch.

Serves 4.
