1 zucchini for every 2 people + 1 lg. zucchini (peeled & finely chopped)
1/2 c. bread crumbs per person
1/4 c. grated cheese per person
1/4 c. melted butter per couple (2 people), may add more butter for a moist stuffing
Cut each zucchini in half. Scoop out center. Place zucchini in baking dish with 1 inch of water at bottom. Place scooped side up. Combine melted butter, bread crumbs, cheese and chopped zucchini; mix well. Spoon into center of hollowed zucchini. Bake at 350 degrees for about 30 minutes. Done when fork tender.
