BAKED ZUCCHINI CASSEROLE 
4 medium zucchini
1/4 c. bread crumbs
2 tbsp. Parmesan cheese
1/2 tsp. salt
1/8 tsp. garlic salt
1/4 tsp. oregano
1/8 tsp. pepper
4 eggs

Wash, trim and shred zucchini. Mix zucchini in bowl with all the other ingredients, except Parmesan cheese and eggs. Spoon the mixture into a greased baking dish. Beat 4 eggs and pour over zucchini. Mix lightly with a fork.

Bake at 325°F for 35 minutes or until the top is set. Top with Parmesan cheese.

Makes 4 servings; 130 calories per serving.
