OATMEAL CHOCOLATE CHIP COOKIES | |
1/2 c. shortening 1/2 c. brown sugar 1/2 c. granulated sugar 1 egg 1/2 tsp. vanilla 3/4 c. flour 1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 3/4 c. quick cooking oats 1/2 c. chocolate chips Cream together shortening and sugars until light and fluffy. Add egg. Beat well. Add vanilla. Stir in. Sift together flour, baking powder, baking soda and salt. Gradually add dry ingredients to creamed mixture and mix well. Stir oats into mixture and mix well. Add chocolate chips. Shape into small balls and place on a greased cookie sheet about 2-inches apart. Bake at 350°F for 10 to 12 minutes or until golden brown. Remove from cookie sheet. Cool on racks. Yield: about 2 dozen. Optional: One-half cup nuts or raisins or coconut. |
