FRUIT TART 
1/4 c. butter, softened
1/2 c. sugar
1 egg
1 tsp. vanilla
2/3 c. all-purpose flour
Pinch of salt
Fruit - strawberries, mandarin oranges, kiwi, cherries, grapes, etc.

Cream butter and sugar in small bowl until fluffy, beat in egg and vanilla. Mix in flour and salt. Spread batter evenly in greased and floured fancy flan pan. Bake at 350 degrees until cake springs back when touched, about 14 minutes. Cool and remove from pan.

PASTRY CREAM FILLING:

3 tbsp. sugar
2 tbsp. flour
2 egg yolks
1/2 c. milk, heated to boiling

Mix sugar, flour and egg yolks thoroughly in small saucepan, beat in hot milk. Cook over very low heat, stirring constantly until thickened, cool.

Place cake on serving plate and spread pastry cream in center. Arrange fruit in decorative pattern on cream. Refrigerate until serving. Makes 8.
