LITTLE BURRITOS 
1 onion
2 tbsp. butter
1/4 lb. ground beef
2 oz. Cheddar cheese
8 oz. can refried beans
3 tbsp. vegetable oil
4 to 8 tortillas

Peel and mince the onion. Melt the butter in the frying pan over low heat. add the onion and saute until soft. Add the ground beef and cook, stirring with a fork or spatula, until the beef is browned. Spoon the mixture into a bowl, draining the grease off as you do it.

Grate the cheese and open the refried beans. Add both to the mixture and stir. Wash pan, put back on the stove and add 3 tablespoons of the mixture into the center of each tortilla. Fold each tortilla in half and then fold the corners into the center. Fry the stuffed tortillas on both sides until crisp.
