LYNN'S CARROT CASSEROLE 
4 c. cooked carrots
1 tsp. parsley
Salt and pepper
1 1/2 c. buttered bread crumbs

CHEESE SAUCE:

2 tbsp. butter
1 tbsp. flour
1 c. milk
1/2 tsp. salt
1/8 tsp. pepper
1/2 c. grated Velveeta cheese

Combine carrots, parsley and salt and pepper in casserole. Melt butter. Add flour, salt and pepper. Stir until smooth, gradually add milk stirring constantly, cook until thick and smooth. Add cheese and stir until melted. Pour over carrots and top with buttered bread crumbs. Bake at 350 degrees.
