BLACK-EYED PEA SOUP 
4 cans black eyed peas
5 slices bacon
1 med. onion, chopped
2 tbsp. jalapeno peppers, chopped
2 cloves garlic, chopped
3 c. water
2 beef bouillon cubes
3 c. grated cheddar cheese
Salt and pepper to taste

Fry bacon in soup kettle. Remove bacon. saute onion in bacon drippings. Add the rest of ingredients except cheese. Crumble bacon and add. Let simmer 30 minutes. A few minutes before serving, add cheese and let melt. Do not boil.
