NACHOS 
Flat, round Tostada chips
4 ripe avocados
4 tsp. lemon juice
Fresh, minced onion
Salsa, picante style
Sour cream
Shredded Mozzarella cheese
1 can refried beans
Fresh Parmesan cheese
Black olives, sliced (optional)

Make guacamole. Mash avocado meat, add lemon juice and mix. Add onion, salsa and garlic to taste. Mix and set aside.

Place flat, round chips on cookie sheet. Remove beans from can and mix 1 tablespoon water with them. Place about a tablespoon of beans on each chip and flatten carefully. Sprinkle with grated Mozzarella. Place in 350 degrees oven until cheese melts. Remove from oven. Place about 1 tablespoon guacamole on top, about 1/2 teaspoon sour cream and sprinkle with grated fresh Parmesan cheese. Add sliced black olive to top, if desired.

Return to oven until sour cream and guacamole are heated. Sour cream looks sort of melted. Remove from oven and eat immediately. Chips get soggy if you wait too long.
