PINEAPPLE ZUCCHINI LOAF 
3 eggs
1 c. oil
2 c. sugar
3 tsp. vanilla
1 tsp. baking soda
1 tsp. baking powder
2 c. shredded, peeled zucchini, well drained
3 c. all-purpose flour
1 tsp. salt
1 (8 oz.) can crushed pineapple, undrained
1 c. chopped nuts
1/2 c. raisins

Heat oven to 350 degrees. Grease and flour 2 (9"x5"x3") loaf pans.

Beat eggs until fluffy. Add sugar, oil and vanilla; blend well. Stir in zucchini and add dry ingredients. Stir in pineapple and juice, nuts and raisins. Bake 60 minutes. Cool 10 minutes in pan, remove and cool completely.
