PINEAPPLE ZUCCHINI MUFFINS 
3 eggs
1 c. salad oil
1 1/2 c. sugar
2 tsp. vanilla
2 c. shredded zucchini
1 c. crushed pineapple
3 c. flour
2 tsp. baking soda
1/2 tsp. baking powder
2 tsp. cinnamon
1 c. raisins

Beat eggs. Add oil, sugar, vanilla; beat. Stir in zucchini and pineapple. Sift together flour, baking soda, baking powder, and cinnamon. Stir into zucchini mixture. Add raisins. Pour into muffin tins, greased. Bake at 375 degrees for 20-25 minutes.
