MEXICAN CORN BREAD 
1 c. yellow cornmeal
1 c. milk
1/2 c. chopped onion
1/2 tsp. baking soda
1/2 tsp. salt
1 c. bacon fat or oil
3 eggs
1 tsp. garlic powder
1 1/2 c. shredded Cheddar cheese
3 jalapeno peppers, seeded and chopped
1/2 tsp. sugar
1 sm. can pimento

Preheat oven to 350 degrees. Mix all together well and cook 45 minutes in greased skillet.

VARIATION: Fry 1 1/2 pounds hamburger, drain and crumble. Pour half of batter in skillet, sprinkle on meat, and rest of batter and bake.
