BREAD PUDDING 
1/2 loaf Roman Meal bread, toasted
3 egg yolks
1 tsp. vanilla
3/4 c. sugar
1 c. milk
Scant 3/4 c. butter

Toast each bread slice light/medium. Tear toasted bread into pieces. Arrange in 9"x9" pan.

Mix egg yolks, vanilla, sugar, milk and butter together until smooth. Pour over bread pieces. Mix together. Place in preheated 350 degree oven for 1 hour.

Meanwhile, beat together 3 egg whites, 1 drop vanilla, 1/4 cup sugar in a glass bowl. Have beaters pre-chilled. Beat until egg whites form stiff peaks. When pudding has baked 1 hour, remove from oven and cover over with beaten egg whites. Return pudding to 350 degree oven about 1/2 hour or until golden brown.
