BROCCOLI CASSEROLE 
3 pkgs. chopped broccoli
1/2 stick butter
2 cans cream of celery soup
3 eggs
24 Ritz crackers, crushed
1 c. minced onion
1 lb. Colby cheese, shredded
1 can onion rings, for topping

Cook broccoli as usual until tender. Drain. To broccoli add butter, soup and eggs, beat or stir. Add crackers, onion, and cheese. Stir until mixed well.

Pour into a 13x9x2-inch pan, buttered. Bake at 350°F for about 25 minutes or more. Last 3 to 5 minutes add a can of Durkee onion rings on top.
