3/4 c. shortening 4 c. flour 2 c. sugar 1 tsp. cloves 1/2 tsp. salt 2 1/2 c. buttermilk 1 lb. cooked, cooled raisins 1 c. chopped walnuts 1/4 tsp. allspice 1/4 tsp. nutmeg 2 tsp. cinnamon 2 1/2 tsp. baking soda Sift all dry ingredients except soda together. Rub in shortening. Add cooked raisins and walnuts. Mix well until raisins and nuts are coated with flour mixture. Mix soda with the buttermilk and add to flour mixture. Mix well with spoon, not mixer. Pour into a greased and floured 9 1/2 x 13 1/2 inch pan and a 8x8 inch pan. Bake 45 minutes at 350 degrees. Serve with lemon sauce. LEMON SAUCE: 1 c. sugar 2 tbsp. cornstarch 2 c. boiling water 4 tbsp. butter 2 tsp. lemon juice with grated rind of 1 lemon Mix together in saucepan the sugar and cornstarch. Stir in boiling water gradually. Boil 1 minute, stirring constantly. Stir in butter and lemon juice with rind. Serve hot or cold. |
