APRICOT CAKE 
1 box yellow cake mix
1 (17 oz.) can apricots, chopped
3 eggs
11 oz. jar apricot preserves

Mix cake, eggs, chopped apricots and juice. Beat three minutes. Bake at 350 degrees for 35 minutes in greased and floured 8x10 pan. Remove from oven. Let stand 10 minutes.

Heat apricot preserves in jar placed in pan of boiling water. Spread apricot preserves over cake. Serve plain, with whipped cream or ice cream.
