LEMON SQUARES 
Base:

3/4 c. all-purpose flour
1/3 c. firmly packed brown sugar
1/4 c. butter flavor Crisco
1 tbsp. plus 1 1/2 tsp. milk

Filling:

2 eggs
1 c. granulated sugar
1/2 tsp. baking powder
1/4 tsp. salt
2 tsp. grated lemon peel (optional)*
2 tbsp. lemon juice*
confectioners sugar

Heat oven to 350°F.

For base, combine flour and brown sugar in small bowl at low speed of electric mixer. Add butter flavor Crisco. Mix until fine crumbs form. Sprinkle milk over crumbs. Mix until even crumbs form. Spread in ungreased 8 x 8 x 2-inch pan.

Bake at 350°F for 16 minutes.

For filling, combine eggs, granulated sugar, baking powder, salt, lemon peel and lemon juice in medium bowl at medium-high speed of electric mixer. Beat 3 minutes, until light and fluffy. Pour over hot crust. Return to oven.

Bake 25 minutes or until firm in center when touched. Cool. Cut into squares about 1 1/2 x 1 1/2-inches. Sift confectioners sugar over squares just before serving.

Makes 24 squares.

*Lime Variation: Lime juice and lime peel may be substituted for lemon juice and lemon peel.
