ARETI'S POTATO ROLLS/BREAD 
1 pkg. dry yeast
1/4 c. warm water
1/2 c. hot mashed potatoes
1/4 c. butter
1/4 c. sugar
1 tsp. salt
1 c. milk, scalded
1 egg
4 to 4 1/2 c. flour

Soften yeast in warm water. Combine potatoes, butter, sugar, salt and hot milk. Cool to lukewarm. Add softened yeast and egg. Stir in 2 cups of the flour beat well. Stir in remaining flour (or enough to make a soft dough). Knead on a lightly floured board until smooth and elastic 6 to 8 minutes.

Place in greased bowl - cover and let rise until double (1 hour). Punch down, shape into ball and let rest for 10 minutes. Shape into rolls and place on greased sheet. Let raise until double (1 hour). Bake at 400 degrees for 10 to 12 minutes. Makes 2 dozen. Recipe doubles well.

Shape in loaves for bread - 2 loaves.
