PICKLED TONGUE AND/OR HEART 
2 c. water
3 lbs. tongue or heart
1 onion
1 tsp. salt
2 bay leaves
6 peppercorns
6 cloves

Combine ingredients. Cook for 45 minutes at medium temperature. Cool.

Peel tongue and slice thinly (heart should also be thinly sliced).

In a casserole, put vinegar and pickling spice (about 1/4 to 1/2 sm. box or about 2 tablespoons). Add meat and let marinate in refrigerator for at least 24 hours.
