CHICKEN COOKED IN FOIL 
4 chicken quarters, thighs
1/4 c. olive oil
1 tsp. salt
1/4 tsp. pepper
1 tsp. garlic powder
1 sm. Spanish onion, chopped
1/2 c. finely chopped green pepper
2 tsp. dried parsley
2 fresh tomatoes, chopped

Rinse chicken; pat dry with paper towel. Cut 4 (10 inch) squares of foil. Pour 1 tablespoon oil on each sheet of foil; spread to cover fat. Place chicken on foil squares. Sprinkle with salt, pepper and garlic powder.

Combine onion, green pepper, parsley and tomatoes; toss. Spoon vegetable mixture evenly over chicken quarters. Fold and seal foil. Place foil packs on cookie sheet; bake at 425 degrees for 45 minutes. Serve chicken from foil packets. Be careful when opening packets. Steam is trapped inside.
