SALMON CASSEROLE 
15.5 oz. can well drained salmon
Pinch cayenne pepper
Garlic
1 tbsp. lemon juice
1/2 c. bread crumbs (or soda crackers)
1/2 c. milk (nonfat is fine)
3 egg yolks, beaten
3 egg whites, beaten stiff

Preheat oven to 350 degrees. Put oil on 1 1/2 quart baking dish. Heat milk in sauce pan. Add all ingredients except eggs and cook 1 minute. Add egg yolks slowly. Fold mixture into egg whites. Spoon into baking dish. Bake until firm, about 25 minutes. Serves 3 to 4.
