APPLE-PECAN CAKE 
2 c. sugar
3 c. sifted flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
2 tsp. vanilla
1 1/2 c. Crisco oil
2 eggs
3 c. fresh apples, peeled and chopped to bite size
1 c. chopped pecans
1/2 c. shredded coconut (optional)

Preheat oven to 350 degrees. In large bowl, mix all dry ingredients by hand. Add apples and coat well. Add eggs, oil, vanilla, nuts and coconut. Mix thoroughly. Batter will be very thick. Spread into ungreased 9x13 inch pan. Bake for 1 hour. Cut into squares and serve warm or cold. Serves 12 to 16.
