CHEESE BLINTZES 
8 oz. cream cheese
2 egg yolks
1/2 c. sugar
1/2 tsp. lemon juice
1 loaf white bread
1 1/2 sticks butter (melted)
1 1/2 c. brown sugar
3 tsp. cinnamon

Mix cream cheese, egg yolks, white sugar and lemon juice; set aside. Trim crusts off bread. Roll each slice out and brush with melted butter. Flip slice over and spread 1 teaspoon filling (cream cheese mixture) on unbuttered side. Roll like for jelly roll. Dip in brown sugar and cinnamon mixture. Bake at 350 degrees for 10 minutes. (Can be frozen before baking.)
