PAN-FRIED FISH 
4 lbs. fish
2 beaten eggs
4 tbsp. water
2 c. cornmeal
Shortening
Salt
Pepper

Thaw fish, cut into serving pieces. Combine eggs and water. Mix cornmeal with salt and pepper. Dip fish into egg mixture, then roll in cornmeal. Heat small amount of shortening in skillet. Add fish in single layer. Fry over medium heat 4 or 5 minute son each side. Drain on paper towels. 12 servings.
