LEMON CAKE 
1 pkg. lemon cake mix (I use Betty Crocker Lemon Velvet)
3 oz. pkg. lemon gelatin
4 eggs
3/4 c. cold water
3/4 c. salad oil
2 c. confectioners' sugar
Juice of 2 lemons

Mix cold water and gelatin. Add slightly beaten eggs. Add cake mix, then add oil and mix. Pour into a 9"x13" pan which has been greased and floured. Bake at 350 degrees for 35 minutes or until it stops sizzling. While still warm make holes all over the cake about 2" apart being sure to go all the way to the bottom. (A meat thermometer is a good tool.) Mix lemon juice and confectioners' sugar; drizzle over cake, being sure to cover completely and to get it into all the holes. Best served warm.
