ZUCCHINI SOUFFLE 
2/3 c. Bisquick
4 c. zucchini
1/2 c. grated Parmesan cheese
4 eggs
1/2 c. butter
Salt and pepper to taste

Use fresh zucchini. Grate it coarse on grater. Mix together eggs (beaten), Bisquick, cheese, salt and pepper. Add zucchini. Put in a 2 quart greased casserole dish.

Bake at 350 degrees for about 1 hour. Will be puffy and brown or knife will come out clean when done. Serve right away. It will deflate when you take it out of the oven.
