3 c. mashed potatoes
8 eggs
2 tbsp. grated Cheddar cheese
2 tsp. paprika
1 tsp. salt
1/4 tsp. pepper

Butter a 8 or 9 inch pan. Spread potatoes in bottom of pan. Make 8 evenly spaced holes in the potatoes. Break an egg in each indentation. Sprinkle potatoes and eggs with paprika, salt, pepper and cheese. Bake at 400 degrees for 10 minutes or until eggs are set and cheese is melted. Serves 8.
