SWEET POTATO SOUFFLE 
4 lbs. sweet potatoes (about 6 lg.) pared and cut into 1 inch pieces
1/2 c. milk
1/4 c. butter
1/2 c. firmly packed brown sugar
1/4 c. granulated sugar
1 tsp. ground cinnamon
1 c. miniature marshmallows

Preheat broiler. Place potatoes in large saucepan. Add milk and water to cover. Bring to boil. Reduce heat; cover and simmer 15 to 20 minutes until soft. Drain potatoes, reserving cooking liquids. Place potatoes in food processor or blender. Add butter, brown sugar, granulated sugar and cinnamon. Process until well blended (thin with reserved cooking liquid if necessary). Pour mixture into 9 inch square glass baking dish. Sprinkle marshmallows over potato mixture. Broil 8 inches from heat source 1 minute until marshmallows are lightly browned.
