MEATBALLS WITH EGGPLANT 
1 lb. ground beef
1/2 lb. eggplant
1/2 c. bread crumbs
2 eggs, room temperature
Parmesan cheese
Fresh or dry parsley
Pepper
Salt
2 cloves garlic
Italian Sauce

Mix together (except Italian Sauce); make fat gulf balls, fry in olive oil. Set on a cooking platter or baking dish. Pour Italian Sauce and meatballs next to each other. Sprinkle with Parmesan cheese and slices of Muenster cheese over each meatball. Cook at 375 degrees for 20 minutes. You can also try meatballs with lamb.
