BAKED CHICKEN DIJONNAISE 
4 skinless, boneless chicken breast halves (4 oz. each)
1/4 c. country-style Dijon mustard
1/4 c. purple (red) onion, finely chopped
1/2 c. Swiss cheese, coarsely grated

Heat oven to 350 degrees. Line cookie sheet with aluminum foil. Arrange chicken breasts on prepared cookie sheet. Brush each with mustard; sprinkle with onion and Swiss cheese. Bake 12-15 minutes until chicken is cooked through and cheese is melted. Makes 4 servings.

This is quick, easy and elegant enough for company. It always gets raves for me.
