LIGHT CHICKEN PARMESAN | |
1/3 c. Parmesan cheese 1/4 c. dried oregano or basil 6 med. boned chicken breasts 1 tbsp. butter 1 tbsp. all-purpose flour 1/2 c. skim milk 1/2 (10 oz.) pkg. thawed chopped spinach, drained 1 tbsp. chopped pimento 1/4 c. sliced scallions In shallow dish, combine cheese and dried seasonings. Roll pieces of chicken in cheese mixture and coat lightly; set remaining cheese aside. Arrange coated chicken in baking dish. In small saucepan, cook scallions in butter until tender. Stir in flour and add milk. Cook and stir until thickened and bubbly. Stir in spinach and pimento. Then spoon spinach mixture over chicken and sprinkle the rest of cheese mixture. Bake at 350 degrees for 30-35 minutes or until chicken is tender and not pink. 202 calories, 7 grams fat per serving. |
