LENTILS AND RICE 
1 c. lentils
1 c. brown rice
5 c. water
2 cloves garlic
1 sm. onion
1 stalk celery
1 lb. cheese (cheddar, farmers or Velveeta)
Shredded lettuce
Tomatoes
Taco or picante sauce
Your favorite tortilla or taco chips

Combine lentils, rice, water, garlic, onion and celery. Chop last 3 ingredients. Bring to a boil in large saucepan then lower heat, cover, and simmer until water is mostly gone. Add cheese and stir to melt.

Serve on lettuce bed with tomatoes and taco sauce. Use chips as spoon. Cooked ingredients may be used in burritos.
